1 large red delicious apple, chopped, skin on
1 C. self-rising flour
1/2 C. sugar
1 tsp. cinnamon
1 tsp. vanilla extract
1 large egg, beaten
1/2 C plus 2 T milk
oil for frying
In a bowl, whisk together the flour, sugar, and cinnamon. Add the egg, vanilla, and milk. Stir in the apple. Let it all sit for about 5 minutes. Heal half of the oil in a frying pan, then drop the apple mixture into the hot oil by heating spoonfuls. Fry on each side for about 2 minutes or until a golden brown color. Remove from the oil onto a paper towel, then dust lightly with powered sugar.
